Sarah Wheeler first created her own delicious, raw, organic, cane sugar-free, gluten-free, dairy-free, soy-free and low GI chocolate because a professor of nutritional medicine told her to eat 50 grams of 85% dark cacao daily as a medicine to assist in curing a number of health issues that were tiring her out as a mature mum.
Sarah tried very hard to follow the doctor’s orders but try as she might, she just could not find a chocolate good enough to eat every single day.
A friend taught her the basics of chocolate-making and that was enough to motivate and inspire Sarah to get very creative. She went to work in her own kitchen and painstakingly perfected the delicate alchemy of raw chocolate-making.
Sarah discovered the perfect blend of the finest 100% certified organic raw cacao butter and raw cacao powder, sweetened with a touch of dark agave.
Sarah also now makes a vegan mylk chocolate sweetened with maple syrup . Sarah’s individual chocolates are available for weddings and events.
Sarah also discovered a passion for creating daring and exciting flavours using a combination of ingredients, local whenever possible, for example Davidson plum and ginger. All ingredients are organic, ethically sourced and her goodies are always made with the ethos of no cane sugar and gluten-free!
Sarah began making what she felt was the best chocolate possible, with the best ingredients possible, as a medicine for herself. She spared no expense to find the cure she was hungry for. The formula is perfect because cost was never a consideration – the best therapeutic grade raw, organic, nutrition-packed, delicious chocolate was the goal and anyone who has eaten Sarah’s chocolates will tell you – she scored!
This is the chocolate Sarah shared with her dear friends. This is the chocolate they all loved and asked for more of. This is the chocolate she taught one of Europe’s professional chocolatiers to make (prior to this he was melting down couverture chocolate buttons like most everyone else) and this is the chocolate she is hand-making and offering to you. Nothing less than the absolute best! Puremelt Chocolate never skimps on quality by substituting cheaper ingredients in the name of financial gain.
Sarah’s passion became "chocolate without compromise" and led her to create Puremelt Chocolate Byron Bay.
Sarah spent years travelling to farmers markets, gourmet food shows and health festivals up and down the East Coast of Australia, putting products in the mouths of thousands of willing ‘tasters’ – doing the best possible real market research.
Hidden in the exquisitely beautiful Byron Shire hinterland is the township of Mullumbimby, affectionately known as ‘the biggest little town in Australia’, and the place where all the Puremelt Chocolate magic happens.
"It's a dream come true" says mother of three and Puremelt founder, Sarah Wheeler.
Sarah and her small, dedicated team have been recognised and awarded for some of the amazing work they do.
- In 2014 at the Sample Food festival in Bangalow, Puremelt walked off with the Golden Fork for their tasting plate, which included a gluten-free brownie and two chocolates.
- In 2015, Puremelt brownies took home a Bronze Medal from the Royal Melbourne Fine Food Awards.
The most important ingredient that Sarah adds to all of her work is very special indeed – 100% pure love. She pours it in by the bucketload to make sure that you can taste it in every bite.
Delicious treats that are packed full of goodness is what you can expect every time you pick up something made by Sarah and her small team at Puremelt Chocolate Byron Bay.
